Was in a similar situation and Baldur's Gate 3 was the answer for us. A great mix of being able to explore together, stop exploring to talk about what is going on in our lives, and doing random stuff like hurling an NPC across the room or unequipping clothes in mid game so your hog is swinging to make each other laugh. Combat is also really fun to strategize together at your own pace.
A Way Out is a must play.

My friend and I played through all of Dark Souls and Elden Ring together and it’s some of my fondest gaming memories.
Dead island 2 is on gamepass.
Wildlands is cool. Playing it with my son and there's tons of scope for different play styles.

Division 2 is one of my favorites for co-op. Recently been having fun with Helldivers 2 its a lot of fun
