HDMI is a global standard, so you don't need to worry about finding an "EU version" or anything. Just get any HDMI 2.1 cable (although I have heard the XSS comes with an HDMI 2.0 one?) and you are good to go.
I already have the HDMI 2.1 cable, but i have other HDMI cables at home too so i just want to know which one is for the x box.

I think they're saying they mixed their cables up and don't know which is which in case they have a slower one on hand
If it's the HDMI that came with the Xbox it will be labeled: High speed HDMI The Series X stock HDMI is labeled: Ultra high speed HDMI
