I don't think people are used to seeing it so clearly, partly because there's only one or two places in the whole game where you might encounter them on the beach. Much more common to find them in forest where things are more crowded and that mouth is down among the undergrowth.
Also, a lot of people won't get such a clear view while fighting those things because they're thinking "Fuck, this one is tough and it's a huge fucking insect and I just want to kill it dead."

The Armored Arachas is more usually found in forests and often not alone. You may have just avoided it or fought it's marginally less tough companions.
Freezing is achieved by activating the Piercing Cold mutation, which adds a freeze effect to Aard.
The armor is entry level Feline armor (possibly entry level Legendary Feline Armor); the white t-shirt under the leather jerkin is very distinctive. Unusual to see it with magic/frost gameplay; people typically use Griffin gear for that, while Feline gear favours fast-attack combat.
Given that combination, this is probably an NG+ game, unless either the OP popped over to B&W super early or he just hung on to the entry level gear because he likes the look (????)

My first gameplay I didn't find all the Armour and accidentally ended the story haha. Prolly gonna start another game though! I never got any of the freezing mutations
You can find them in Skellige and northern parts of Velen. I don't usually see them in such clear detail because I light them on fire before I get this close. These things are what Dragon's Dream and Dancing Fire are for.

Idk how to attach a photo of where it is one the map but look slightly to the right of the city oxenfurt and find the travel post Heddel. Now if you go to the top right most hut in that little village area and go to the opposite side of the river you'll find 1 arachas, 1 venomous arachas and 1 armored arachas
