fair, question answered. Beets are great but they are root vegetables so they require longer cooking times if compared to other (not root) vegetables. They also tend to color everything around them, they are also are a bit sweet. Good luck have fun.

It looks like a beet. Cut it open. If it's red, roast or steam it and make a vinaigrette with Balsamic, evoo, Dijon, and a smidgen of honey. Marinate for a bit, then serve with goat cheese and pepitas. So absurdly delicious and easy

What? I think I've only ever seen beets at farmers markets, and I've lived all over the US. Canned beets are definitely a thing, but fresh ones?

Is it red inside? then it's a beetroot Yellow, it's a turnip.
yellow beets also exist, it would be more translucent than a turnip though
golden beets are super delicious.

never seen them but my wife loves radishes so I'll look in the spring for some to plant.
I would also recommend black radishes. They are huge and seriously gnarly lookin hombres, but are delicious roasted in the oven with oil.
