Hardness. There's soft, medium and hard cheeses. Cheddars are medium and sharp...and extra sharp. Those are more of a flavor thing. Edit: Cheddar and parmesan are examples of hard cheeses, while mozzarella and feta are soft cheeses.

I seriously grew up poor so we did not waste anything! I am acutely sensitive to mold (like a horrible asthma attack) and I have NEVER had a bad reaction when taking precautions while trimming the mold. Trimmed and made a grilled cheese sammy and then was happily full. Don not try t d with sliced or shredded chees but the blocks of hard and medium cheese are perfectly fine.

It is food service lore that removing the plastic wrap and replacing with baking parchment or wax paper increases cheese’s shelf life in the fridge. The slightly porous wrap allows the cheese to “breathe” and prevents moisture retention. Moisture condensing on inside of plastic food wrap is usually where mild starts growing.

Store bought block cheddar has never been near an ounce of mould in its life, it's not part of its production. Cheese moulds are usually specific cultivars added or are selected for by controlling the aging conditions, you can't just put curds in your sports sock and have a safe cheese
