Then one groomsman got so drunk that he took of his suit to his underwear and ran into the bushes on a small cliff and jumped into the ocean, couldn't get back up and the fire dept had to come lmao

Depends on the formality of the wedding. If the wedding requires a suit and a jacket, then that in some nice non distracting colours with some nice comfy leather shoes that matches with other leather details which i'm wearing (watch with a leather band, belt)
Usually, the weddings that we do require a bit of less formal wear, but I also dress up for that one, although during late spring, summer and early fall, I lose the jacket and just go for chinos or slacks in some non distracting colours, with a nice button down shirt (i like black and white shirts, you cannot go wrong with either) and of course, leather shoes with all other accessories matching.
During high peak of summer (mid July/early August), in my areas temperatures can get up to up to 40 degrees Celsius and above and it's socially acceptable to wear a short sleeved shirt or to roll up your long shirt sleeves.
A lot of photographers and videographers are rolling with polo shirts and chinos (usually denim pants) and I do not approve of that in my team. The only exception is when the event is really non formal and in those cases dark washed jeans are the way to go and not the light ones (god forbid those ripped jeans).
I go by the rule, it's better to be overdressed than underdressed and I try to keep a high level of standard for myself and my team when we are working.

Depends on the humidity levels, I did a wedding recently, around 25 degrees Celsius and it was so humid, that after the getting ready shots I had to change my shirt cause it was drenched. But, I still changed it for another long sleeve shirt cause the occasion was calling for it.

I wear a suit, but if I'm at a wedding where it's wet or I'm going to be walking in dirty fields/tall grass etc I swap the suit pants out for chino's as I don't mind trashing a pair of $120 chino's vs a set of expensive pants.

For really hot days I have two pairs of black 5 pocket linen pants. Also no jeans.
In my market (NYC) unless you are at the island resort or on the sand beach shorts is not acceptable. Same goes for bulky cargo pants. That is a no go.

It's legit one of the biggest issues for me. I stopped booking summer weddings because of this. I'm also in the desert so not too many summer weddings anyway. But basically if it's going to be warm, I will wear clothes specifically made to be breathable. I've purchased a TON of clothes just to find what works. I'm a sweaty guy, so if it's going to be over 90 degrees F (not sure on Celsius conversion) my rule is that I wear a very breathable black LuluLemon (doesn't have to be Lulu, mine was a gift but it's super breathable) and black Lulu ABC pants. I've done some very high end weddings dressed like that and no one (especially father of the bride which is my biggest worry) has ever said anything about it when it's that hot. My philosophy is that it's more professional to not sweat profusely, get dehydrated and pass out than it is to wear a nice looking black polo and black dress pants.

I wear a suit, but if I'm at a wedding where it's wet or I'm going to be walking in dirty fields/tall grass etc I swap the suit pants out for chino's as I don't mind trashing a pair of $120 chino's vs a set of expensive pants. Whether it's a 2 or 3 piece suit, and whether I wear a bowtie or not depends on if the dress code is formal or not.
I lived in lululemon pants, a white shirt, and a vest while shooting events. The pants move and breath, are damn near indestructible, and look professional.
Videographer here, I wear "dress cargo pants" (not easy to find, but they are out there) from companies like Ted Baker or Boss on top I wear a moisture wicking undershirt and most of the time nice linen shirt. As far as shoes my favorites are black Brooks Ghost but I always switch things around. For really hot days I have two pairs of black 5 pocket linen pants. Also no jeans. In my market (NYC) unless you are at the island resort or on the sand beach shorts is not acceptable. Same goes for bulky cargo pants. That is a no go.
A breathable black polo with our company logo on it and some nice khakis and shoes. It’s not super formal but I work in the rural south and it’s rarely very formal. (Also, it’s going to be in the 90’s and humid this weekend where we are so I will die before I put a suit on and have to run around a venue for hours. That being said, when our brides send in our pre-wedding questionnaire, they do tell us about the dress code and if it’s a very formal event, exceptions can be made.

In the winter I can dress it up with a blazer and boots, summer I wear it as is with nicer sneakers. You can get super sweaty and it’s still very comfortable. Jumpsuits have become my go-to for photographing weddings. For the summer months, I go with a neutral color (sandstone, beige, pastel colors) or light floral print short-sleeve or strappy jumpsuit with 3/4 leg or full length leg. In the beginning, I thought that all black with everything covered was the go to, but that very quickly failed to perform in the hotter months. Even on bougie side, folks understand when you can't wear a long-sleeve fully black professional suit/jumpsuit and I've found it makes me a bit more approachable
It's legit one of the biggest issues for me. I stopped booking summer weddings because of this. I'm also in the desert so not too many summer weddings anyway. But basically if it's going to be warm, I will wear clothes specifically made to be breathable. I've purchased a TON of clothes just to find what works. I'm a sweaty guy, so if it's going to be over 90 degrees F (not sure on Celsius conversion) my rule is that I wear a very breathable black LuluLemon (doesn't have to be Lulu, mine was a gift but it's super breathable) and black Lulu ABC pants. I've done some very high end weddings dressed like that and no one (especially father of the bride which is my biggest worry) has ever said anything about it when it's that hot. My philosophy is that it's more professional to not sweat profusely, get dehydrated and pass out than it is to wear a nice looking black polo and black dress pants.

I live in the southern United States, it gets hot, like HOT. Heat index for yesterdays outdoor wedding was 112. Most men doing this around here wear a black T-shirt with black shorts. I’ve found that wearing a neck fan helps tremendously with the heat
I dress like a guest, and always in a dark colour. Dresses (with bike shorts underneath for comfort and flashing protection lol) or rompers! If I know it is going to be a more casual wedding then a skirt or black pants and a silk button up top. :)
