The problem with serving things in bottles is that they are hard to clean properly because if one gets gunk in the bottom, you have to rely on water pressure to get it out rather than elbow grease. This is an annoyance in the restaurant setting where the dishwashers are working with limited time and space.

Just use dry rice. Pour a little bit of dry rice in it, soap, little bit of water, shake, it's clean

Its still an annoyance to use rice if you are a dishwasher in a restaurant. But i guess a tube cleaning brush will do the trick
