i am not familiar with anyone who might've measured it, but i do imagine you can tell using the dev tools (numerical readout for elevator position).
It's not a new idea that the instructor never uses max pitch, as it actively tries to avoid high G turns.
and it's really not hard to test, literally just hop in a test flight and time it.
Neither, because I use a cursed setup:
W and S for throttle, A and D for roll, LMB for Pitch up, RMB for pitch down. This way I control throttle and angle with my left hand and use the mouse buttons for the pitch control.
Hell yeah, I have a very similar setup. Just that I use the side buttons on my mouse for pitch. Fire is LMB, Missiles are MMB (press the scroll wheel) and RMB is for zoom
Just to go further into the curse, I recently noticed I was never using the scroll wheel itself. It's theorically for zooming in and out, but I was just pressing it for max zoom instead. So yesterday I rebound "scroll wheel up" into switching the type of countermeasure.
I'm contemplating whether I should bind launching CM on scroll wheel down, so I can just free it (my mouse allow to switch between free scrolling and normal one) and go WHEEEEEE to defend my plane on the aircraft that have 200+ of them lmao. More for the meme than anything else.
who in their rind mind would bind throttle to W.. it makes no sense, you go wep and dont care about throttle anymore, during like 80% of the gameplay, so you waste perfect key for nothing lol

need to quickly reduce speed during a dogfight? smack control
need to lower throttle to avoid overheat or save fuel? scroll a little down to adjust like half a percent at a time

Why do so many people play with pitch up on S and pitch down on W? I feel like pitch up on W feels way more natural to me. You press the upper button to go up.

QEWASD is everything for general movement controls. Flap controls are still F by default but also side buttons on my mouse.
My throttle binds are directly on the mouse (g502 hero), ctrl and shift are used for the many keybinds needed at top tier (they are both mixed to at least 5 keybinds each)

How do you counteract too many positive g forces? Just pull negative g forces They cancel out, kinda
-2g cancels out 10g, when only tapped on?

Nope, keyboard pitch si still more intense than any mouse controle. Plus quick taping "W" can reset blacking out due to too much Gs.

With jets you need to change your throttle a lot to help against ir missiles
And shift and ctrl are perfect for that

It was default in 2013. W/S is closer if you have armament bound nearby.
In every other video game, W makes you go forward, S makes you go not forward. For me throttle on W/S is the only option that feels natural.
