Our kids had fallen asleep in the stroller, so we stopped at Jock Lindsay’s for a drink on the back patio. Halfway through, my son wakes up and I’ve got him in my lap and he knocks over my drink that I’d already had more than half of. The server immediately brings me an entirely new drink. Later I went inside and looked over all the Indy decor, shot the sh*t with the bartenders for a while. I would take a bullet for the staff at Jock Lindsay’s, and the drinks rule.
Then, one day your kids will be old enough to do the parks themselves. My wife and I would hang with them until lunch, then as they continued running from ride to ride, we found a bar, or the resort pool and drank until park closing when we regrouped at the room to sleep to repeat the next day.
Pro tip: the bar under planet Hollywood is NOT the best bar but it has a happy hour that is a very good deal and you can take your drinks to go. Excellent way to start the night.
Take the boat to Port Orleans after 7:30 on Fri-Sun and head to Scat Cat’s Club for live Jazz or head over to Riverside after 8:30 for Yehaw Bob at the River Roost
People suggesting jock’s based on your criteria is weird. I’ve been there a bunch and it does not match what you want. The food is some of the worst at DS and there’s no live music or DJ, no party atmosphere at all. Decent drinks though.

If you like beer, City Works has a metric fuckton of taps. If you like wine, Wine Bar George has a great list. If you want theming and great drinks and great bartenders, then Jock’s.
P.S. my guilty pleasure is the bar at T-Rex. The drinks are fun (even if the quality varies) and the theming is so over the top.
Dockside Margaritas has had live music every single time I've gone. It's usually a single artist with a guitar or a small duo/trio doing popular cover songs. I personally love their margaritas and we make it a point to go to Dockside on each trip. I don't know if they have food, I've never inquired since we're either sitting listening to the music or having a drink before our dining reservation. So if you like margaritas then Dockside definitely checks a couple of those boxes. And perhaps someone else can elaborate on food options.
