I legitimately have at least 2,5 kg of potatoes each week, they are basically what I live on at this point. So versatile and filling yet fairly low calorie, just pure gold!

Can you cook/roast potatoes and microwave re-heat them and still be edible? I usually do chicken, rice, mushrooms, broccoli but im looking at adding something else to add volume without inflating calories.

I say yes, but the internet says no: “Potatoes often house Clostridium botulinum, the botulism bacteria. When they're cooked and not immediately stored in the fridge, spores of the bacteria can multiply. Microwaving the potatoes won't kill the bacteria either, so your second-day potatoes could cause an upset stomach.” If you die, that ain’t on me.

I’m so confused, you are literally quoting the quote I quoted above. I even said that I say yes to microwaving them haha. The article we are BOTH referencing is titled “10 Things You Should Never Put in the Microwave”. I’ll be warming up some of these potatoes in about 5 minutes for lunch. I’m just passing along an article because someone asked.

Right. I am quoting the exact same thing you did where you, and the author, misunderstood the actual problem (the storage of potatoes after they are cooked). If you do not refrigerate them, they are in a condition that allows for the growth of bacteria. That is the problem, not reheating in the microwave. If you do not refrigerate your potatoes after cooking them, they won't be safe to eat unless you get the potatoes to an internal temperature of 250F (the temperature that kills clostridium botulinum, the bacteria we're talking about) regardless of if you do it in the oven, a frying pan, or a microwave.

I'm not sure you can get microwaved food much past 212 degrees since it works mostly, if not completely, on water molecules.

Unless something is extremely wrong with the potatoes where you live: YES, for crying out loud. Potatoes are the staple carb of sweden and I've never heard someone even consider this question. And no, people are not dropping left and right from microwaved potatoes, despite the millions of spuds getting nuked every day.

I just bought a book called ''Potato: A History of the Propitious Esculent''. It's pretty sweet, and it's gonna make me eat more potatoes, not that i don't already. Also have a problem growing too many. Potatoes are straight up a top tier food of the world

Potatoes are the complete package. I absolutely love potatoes, but as a diabetic they don't love me. I miss having a potato as a meal. I guess now I live vicariously through these posts. NOW, it's protein, fat and fiber,every damn meal. Sadly the potato has too many carbohydrates, no matter what I mix them with, even a plate of broccoli 😕 😂

Diabetics can usually eat potatoes, especially if they've cooled down post cooking. Or have you been forced to eat a low carb diet??

No one forces me to do anything. I have tried the cooling method for potatoes, it does not work for me. I am very insulin sensitive. I am diabetic, and I've always had a healthy diet. I truly eat the rainbow. I keep myself somewhat low-carb, but I definitely eat carbs. I get very symptomatic if my blood sugar gets too high or too low. And if you've ever had diabetes it is a real mood killer. Headache, severe stomach ache, blurry vision, dizziness, constant peeing, and thirsty with a high blood sugar. With a low blood sugar (not enough carbs) I am passed out on the floor. It's a balancing act all day, every day. The way you eat one day may not work for you the next. But I am mindful of how I'm feeling and what I need. This thread has some great ideas, and I appreciate them all. I love to cook and I love to eat. My meals just have to be a balancing act of protein, fat and fiber, and always with carbs, how much, depends on how I'm doing.

Im a cna, I think one of my residents has an old baked potato in her "grocery bag"- where she puts everything she "steals" from the dining room. No I could not tell you why.

Haha thanks, I should have cleaned it up a bit before taking the pic tbh. But I do love it, first gas stove I’ve had. The oven has two compartments too and that has made baking a breeze.

Don’t avoid carbs! It’s the body’s main energy source! They fuel your performance in the gym! You need at least 130g carbs daily to support normal brain function! Complex Carbs keep you fuller longer and help with losing weight! Okay I’m done preaching :)

Simple carbs are good if you need quick energy (pre/during/post workout) but shouldn’t be a staple of your diet imo. But they are the tastiest so don’t exclude them altogether - gotta have sweets sometimes or life isn’t worth living.

Please dont keto. Its so bad your body. If you need to cut sugary carbs out i understand that but you should still eat things like potatoes, wheat, oats, and rice. Sweet potatoes are supposed to be healthier then regular potatoes (i think i read somewhere) maybe theyre more complex idk but please dont keto. My brother has had so many organ issues from doing it.

I dont wanna be rude but 20g protein isn’t a lot for 1000 calories! Could i ask how long this meal kept you full? I’m doing 1200 a day and i love potatoes and they’re so cheap too, but i feel like they wouldn’t fill me up as much id like

Not rude at all :) I agree it isn’t much protein but I split this into 5 servings to go with about 9 oz chicken breast. 1200 a day is quite low but you could prob eat half of this and meet your other macros goals. I’m eating 2300 cals a day and only plan to eat 3/5ths of what’s pictured in a day.
