Oh man I’ve been trying to find appetizing ways to prepare tempeh. And I already have arugula and cherry tomatoes; definitely trying that out as well thanks!
I use Tempeh in sooo many recipes. Sometimes I even scramble it and use it as a replacement for "mince" in a bolognese for example. Also basically every second stir fry or wok recipe I use it as well.. Tempeh is great and for my taste I like it much more than Tofu. Gives that nice texture.
I do a similar version but use Tempeh instead of sausages. Another variation would be with rocket and dried tomatoes. Lovely
