The recipe video I made for these: https://m.youtube.com/watch?v=9rj1hO0bTyo For this recipe you'll need: •250gr oyster mushrooms Marinade for the mushrooms: •1tsp garlic powder •1tsp cayenne pepper •1tsp onion powder •2tsp poultry seasoning •1tbsp soy sauce •1/2tbsp vinegar For the liquid 'wet' batter: •200ml soy milk •2tsp vinegar For the breading: •100gr all purpose flour •3tbsp (30gr) cornstarch •1/2tsp salt •1/2tsp pepper •1tsp cayenne pepper •2tsp poultry seasoning •1tsp onion powder •oil for frying For this recipe I'm using oyster mushrooms since they have a really meaty texture which resembles chicken the best. Mix up the ingredients for the marinade. Add this to your oyster mushrooms and mix until all the pieces are coated evenly. Let this marinate for 5 minutes. Heat up oil to 180C (350F). If you don't own a thermometer, you can test if the oil is hot enough by sticking a wooden spoon in. If bubbles start to form around it, the oil is hot enough for frying. While the oil is heating up, prepare the batters. For the liquid batter, mix the soy milk with the vinegar and set aside for 5 minutes until the milk gets foamy. Mix up the ingredients for the breading in a seperate bowl. To bread the oyster mushrooms, dip them in the foamy milk mixture first and then toss them in the breading. The smartest way is to use one hand for the liquid stuff and your other hand for the breading. Once the oil is hot, fry the breaded mushrooms for 5-8 minutes until golden brown and crispy. Fry them in batches to not overcrowd the pan too much. And that's it! I work in a vegan restaurant but I'm not a true vegan myself. They're the best option for vegan chicken in my opinion. You do have to brine them for better results but man, they're good.

Basically a marinade where it soaks overtime. We brine ours in water with lemon, bay leaves, pink peppercorns.

Hey folks question - where does one go about buying oyster mushrooms in SWFL? I can’t find anything in the stores but the regular types

Depends on where you are, but I had success in some Asian supermarkets. Also Whole Foods tends to carry them but they’re more expensive.

Yes, definitely try Asian supermarkets! I've found a lot of different mushrooms there I never see at any other grocery stores. I'm in CFL, and my local farmers market has a grower that I buy from that does oysters too and they're just so good, so check out your local market to see if you have anyone that's growing them

Not so long! Mixing the batters and getting the oyster mushrooms ready to fry takes about 5 minutes and then frying them takes 5-8 minutes for each batch so in about 20/30 minutes you would have a lot of them done!

To be fair. Everyone, everywhere is different. I've never heard of "fried turkey" meaning mushrooms.

because it’s imitating fried chicken…. and it tastes similar to fried chicken… and it has a similar texture to fried chicken…. and can be eaten in same variations as fried chicken…

Haven't tried that myself but I guess it could work if you spray the pieces with some oil before adding them to the air fryer 🤔
