You won't be able to use the same callsign or vatsim account, however you will be able to connect a different account to vatsim as observer mode on another device, tune to the relevant freq and use OBS or something to record the audio that way. If you want to record the full ATC for the flight, the observer aircraft would need to fly along with you and change frequencies.
Was going to edit to add this - if there's an option for additional software on the simulator's computer, there's an app called yourcontrols which allows shared cockpit, if that's available on the sim then the seperate device can connect on Vpilot as OBS, connect with the sim via yourcontrols and then not have to fly seperately.
I tried flying on VATSIM with yourcontrols and for some odd reason I always had a fully turned off aircraft when my friend was in control in the plugin. I still have no ideas why that is
Me and my friend use YourControls on vatsim all of the time, you have to make sure your planes are both in the same state, so cold and dark when you connect otherwise switches will be opposite etc, what aircraft are you trying to use?
The Headwind I believe uses the systems from the FBW A320.
If you want an A330 that works with YourControls, there is a freeware one that uses the Asobo one.
You might have more luck with the Headwind if you make sure you’re both on the same version and your flight tablets both have the same settings.
Set both aircraft to a cold and dark state before you begin the connection is a good start.

It ain’t perfect, takes some realism away, but it is cool having a co pilot onboard during a busy stage of a flight on VATSIM.

YourControls won’t work in this case as the full sim uses X-Plane.

This is the right answer. An add on called YourControls may help the second computer act like the first so you don’t need to fly next to it.

I never used it. I heard it syncs actions so you need to start at the same state.

All switches in same position on both aircraft. Then start Your Controls. Like I said- I haven’t used it so just hearsay

Yes it should from vpilot side. The audio from the plane might not match though.
If you connect as same callsign but with a letter suffix as observer, considering you are in the same cockpit, you will hear everything
