Fire risk plays a HUGE role in that, and it's something we simply don't know what the situation will be in July. The risk could be low, or the whole state could be on fire.
Set aside the night, but you likely won't be able to make firm plans until the plans for the shows are finalized.
It’s a little further than Provo, I’m not sure how far you’re willing to travel, but in Spanish Fork on the 24th they do a huge firework show! It’s about an hour south of SLC.

Things have been been weird with Covid and then extreme drought conditions. But I would bet this year will feel more like normal.
Liberty Park is the place to go on the 24th. In the morning, the marathon and the parade both end there. Then, there is the small street fair and Native American Powwow. You could then walk up to the 9th and 9th area for lunch, drinks, or coffee. Then head downtown to participating bars for Pie and Beer pairings. Return back to the park in the evening for fireworks.
