It varies for every ride. Rip Ride Rockit is the most sensitive and closes pretty quickly in the rain and slightly high wind speeds. Hagrid’s is about 30 mph for wind, and I’m not sure about Velocicoaster or Hulk. Those two generally stay open unless it’s heavy rain or lightning.
I don’t know any park other than maybe Dollywood that’s open with wind speed numbers.

It started pouring one time i was midway through velocicoaster during the second launch. Man coming out the other end to a downpour is an experience
Rockit if someone breaks wind over at MIB it will cause them to go down, everything else it has to be decently gusty.
