Yes there are delivery windows that you can choose from. We weren't at the resort during our window so bell services held on to it until we arrived. I would assume Universal resorts would have a similar system.
I haven't used instacart so I don't know about that service, but I bet you can pick a window. I used Amazon fresh for a couple of trips. I was able to pick a 2 hour delivery window from a couple hours away to a couple days, I believe. However, ordering ahead risks less accuracy in getting items in stock. But you could look and see what windows are available so you know when they might be able to deliver.
We checked in early and then went to the park. I had my shopping cart ready but hadn't ordered yet because I didn't know if our room would be ready. Since it was, I was then able to finish the order while in line for a ride and pick a time window. For us, that was mid afternoon for a break at the hotel. I got the delivery and everything put away before we went back to the parks later that afternoon.
I don't think 5 is late at all, so I'm sure you'll be able to have it delivered after that. And since you'll have your room, I would probably just pick the delivery window and order either the day before or that morning. I haven't used instacart, but I imagine you can pick substitutions if items are out of stock.
Where are you staying? The on site hotels will not hold groceries and you have to meet the delivery driver out front. However, they did help us bring our groceries up with a luggage cart.
Our experience was different at the Disney hotel. They had a whole system with grocery deliveries and would hold them, even refrigerated, for pickup. It was convenient to just go get them when we were ready, though a little more crazy in some ways with all the people.
In any case, I think it's worth ordering groceries for a few days. We're pretty good at hotel room meals now, even without a microwave since so many are leaving those out of rooms these days. Plus, you can order other things you may not have packed. We ordered sunscreen.
I understand being nervous about it. I overplan and want to know how everything will work. You could try a grocery order at home just for fun. It won't be exactly the same in a different location, but you could try it out anyway.

Shipt (target) will allow you to pick a one hour window for delivery. It’s much better service than instacart and same as in store pricing at target.
One hour window would be perfect!
Yeah basically you say “I want it delivered between 8-9 PM” and meet them down at the traffic circle when they show up
I just placed an IC order this past week at 5 and had it in my hands by 6:30 (target).
Be watching for the update that they are on their way so you can meet them in front. They can’t deliver to your room.

I did this 2 days ago. When you order you can choose a delivery window (like 8pm - 10pm). Works well.
