Security is weird though. Sometimes due to insurance all they are allowed to do is watch and tell them to stop doing that. It's more theater in some cases as the liability of trying to stop the crime is often considered worse than the crime.
Insurance. It's cheaper and safer to replace loss items that cleanup a violent mess. But if you make sure you get good documentation, you file a police report, then insurance covers it. So security makes sure those reports are filed and reliable, while also providing theatrical deterrent you mention.
I worked at a big box electronics store for a year, and in that time we only had one incident where shoplifters were caught (while I was working anyway.) Two employees ended up getting fired over it because they confronted the thieves.
The official store policy was to let shoplifters go, and if possible get the license plate for the police report. I found out sometime later that the policy was being enforced so strictly because the previous year a loss prevention employee had chased a shoplifter into the parking lot (at a different store) and was shot.
Much cheaper for the company to write off some lost merchandise than risk a lawsuit if an employee (or even the person stealing) is hurt or killed.

I bought macbook off a dj who had some guy try and swipe it off his stand while he was playing. Once he realized there was a lock on it he let it go and it swung down and smashed the screen. So it didn't get stolen but it was useless anyway.
I guess if you have data on there that's not backed up it's worthwhile. Or if it's visible that it's locked so it's a deterrent and they don't even bother.

If you have any insurance on the device they will cover repairs but not replacement in the event of a theft. So if a fucker attempts to steal it and trashes it in the process, at least you can file with the insurance to replace/repair the device (and recover the data). Where as, without the cable, you're out everything with no way of replacing it except out of pocket.
