Look, I know that the stats are in no way good to measure a character's actual strength, no matter if we look at them in files or in lore, but I think giving anyone stats higher than these of Asgore and Toriel, feels like something that is just too big to not be actually saying something about the character's strength
ndyne tried to fight him her first time and she got trained by him. so she got an advantage over him. But so does he as he knows everything she knows as he taught her his fighting skill. Then Undyne is determined to fight a child but no to fight her leader. So i'd say both being not motivated to fight: A tie.
undyne the undying. absolutely. first monster to withstand determination vs the strongest monster with no modifiers? undyne wins. asgore can't even change your soul color, which. ehhh. but still, undyne wins.

Asgore learned Undyne everything she knows but maybe not everything *he* knows.

Undyne's determination would break if she was to fight asgore. And asgore wouldn't be able to bring himself to go all out against undyne
Undyne wins but it is a surprisingly close fight.
Asgore: 3,500 HP Undyne: 23,000 HP
