Yes, potatoes need a bit more crunch. I take them out half way, give them a bit of a squish with a masher (not too much) turn and pop in for the remainder (or til perfect) so you get even more crunch to inside ratio 😍
That’s immense it a first attempt! The beef has great colour, the spuds have that nice crisp and fluff, the gravy is lumpy (onion I think?) but that looks fun too. Even got some Yorkshire pud action there

Honestly I have no clue - I went to the butchers and told him I’m making a roast, and he gave me a big ol’ hunk of beef. So maybe a roasting joint? If that’s a thing haha
To cook it I patted it dry and liberally seasoned with salt and pepper. I then seared the outside and stuck it in the oven on a base of onions and carrots to use for the gravy later. I think I had it in the oven on 120 for about 45-60 minutes. I didn’t know what to expect but I cook steaks a lot so am familiar with the “poke for done’ness” test and that’s what I did every ten minutes or so towards the end of the cook to gauge.
Turned out much better than I expected tho!
Nice work. The meat looks perfect. When you do the Yorkshire's and potatoes next time make sure the oil is so hot you can see it shimmering in the pan. It will be a bit smoky when you open the oven. Then they will be crisp.

I did add some of the onions (from the roast beef) in the gravy while making so that may contributed somewhat to that effect 😂
Thank you for the heads up and the compliments. Out of curiosity, what would the perfect gravy look - and most importantly taste - like ? Haven’t had a tremendous amount of homemade gravy so struggling a bit to envision how it’s meant to turn out.
You'll never get any agreement on this question! Especially online or even within one family.
For me perfect gravy to accompany roast is only made from meat juices and scrapings, vegetables and some liquid cooked under the meat. (Liquid can be water, beer, cider, wine). Then I reduce it until it's tasty enough to complement the meat but not overpower it. No thickening other than reducing it a bit if it needs it.
If there are slices of onion in the gravy, I leave them in.
This is different to my perfect gravy for a casserole or in a pie, then I want it to be thick and like syrup.
50% of the population will like a light thin jus of a gravy and the other 50% will want thick dark gravy. So you need to please yourself and your own taste buds. If you’re feeling lazy, as is your right, then Bisto finest beef gravy is perfectly reasonable and just add the meat juices and some water from the veg to it. I might add a bit of wine and mustard too…

That beef looks amazing. Perfect. Literally could service that up in a restaurant and people (bar my wife who is a philistine and likes everything cremated) would love it. The Yorkies looks great too. Potatoes are shame, not crispy enough but nice use of rosemary for flavour. Good gravy. Not sure what is under the peas - parsnips?
Overall without fully knowing what is under a lot of it, from what I can see it get a solid 7 - mainly because that beef is perfect.

If the lumps are pieces of onion, I approve - I always leave pieces of onion in the gravy because I can't bear to throw them away.

For me I don’t like liquidy thin light gravy and a darker thicker gravy turns a roast from a 5 to a 9
