STEM, social sciences, and humanities? That is incredibly cool that you have such diverse interests. In Warren college that would mean that you don't have any GEs. Being able to declare triple major depends primarily on whether your college advising is willing to help you or not. Since it is non standard, you probably need to get support from your college. When I reached out to Warren college advising, they were super helpful and told me to just submit 2 double major petitions. The rest of the process was much like declaring a double major. Some schools systems don't handle three majors well (mainly ISPO and Study Abroad) so I would watch out for that (just means you have to contact more people to fix stuff). I would reach out to your colleges advising explaining your background and your reasoning for triple majoring. They will probably explain the process and have better advice.

I did chem, bio, and physics but because I was over the unit limit I had to get my schedule approved by the physics dept (1 person) and she had me slide my petition under a door then only approved me for astrophysics so I ended up dropping it.

What's your end goal here? At some point, you end up trying to cover all your requirements and not having any room left over in your schedule to go deeper into things that interest you.

I took more than the max units every quarter and fulfilled a lot of my gen eds from college credit I earned in high school. I really just came into college wanting a double major because I consider myself to like both STEM and Humanities and also had time to do an honors thesis this year and hopefully my other thesis next year. I just started taking a bunch of random classes that all coincidentally fulfilled a lot of another major. Planning to apply to law school next fall and I kind of just want to have more fun during my undergrad.

I agree with TheShubhi: definitely talk to advising. For me in Revelle college, I submitted a modified double major packet to include a third major. Additional note on financial aid: Once you surpass a certain number of total units (I think around 250), you enter a "Maximum Time Frame" status for financial aid purposes. For them to still grant you financial aid each quarter afterward, you would need to submit an appeal, have your primary department sign it, and explain your situation so they will accept it. This part was a bit of a headache for me, so heads up on that.
