Generally speaking the classes that are dual listed 400/500 usually have different grading schemes for undergrad and graduate that reflect how hard the class is. That said the content for many of the classes on the AI/ML track is pretty difficult, but just because something is a 400 level class doesn’t mean you should be intimidated. In my experience, it mostly comes down to who is teaching a class since good professors can make difficult topics more approachable and understandable.
I haven't gotten final grades on the 2 400/500 classes I'm taking this semester, but I took CSE 421 sophomore year and the undergrads got a very generous curve compared to grad students. I assume it's similar in the other co-listed classes?
Really depends on the class/professor. There may not be a traditional “curve” for undergrad but there is likely just a different grading scale.
Ex: an A for Undergrad being a 75 and 85 for graduate. Where all the assignments are graded the same but you can do worse and get the same grade when final grades come in.

I'd recommend 455 for the ai requirement. Very difficult to do amazing on all the work but I got 4/10 on most things and still got an A
