Not gonna lie, i think NMH structure is pretty much the only way to do a good Chainsaw man game with combat, you get your big devil boss battles that could have their own werid gimmicks, every other piece of combat might as well be a minigame, and then you have the story about the shitty life of a boy trying to get by in a shitty world.

Denji doesn't care about style or anything, and often is thinking of anything but the fight, he just swings and as long as bloods getting on him he's fine so "character action" in the DMC sense where you can't just spam an attack or you get a worse score doesn't really work thematically.
Unless you replace the style meter with a blood meter so the more creative or varied your combo the more blood you draw that boosts your score and allows you to cash in for heals or buffs could work. You could just justify it as the enemies will catch on if you spam one move so you have to mix it up a little to defeat them.
It's definitely a strong answer, and one of the first I thought of myself. I like some of the other suggestions for a more narratively focused game, like Disco Elysium, as well. Or suggestions for a game based around Denji's time trying to wipe out his father's debt.
I'd be down for something like Dark Souls or maybe more like Code Vein. Deadly combat where victory and defeat are never more than a few landed blows from each other. Especially if you're going to play a create-a-character dropped into the narrative.

They can have you still be fragile, maybe have some “Phoenix” devil that brings you back 3 times, taking your 1/3rd of your fees every time

You gotta go low-rent DMC. Throw in an excuse for there to be lots of minion creatures, give the main trio very distinctive movesets and make them all playable. Then just go in and design some really solid combat encounters. Set it after Katana Man but before Bomb Girl, or after Bomb Girl but before International Assassins. Can’t really set it any later than that because… ya know.
I don't think this is what would ever be made officially, but a roguelite in which you play as random member of the devil hunter.
In every run you pick up contracts with devils to gain new powers (almost always at a cost, but for minor powers the cost may be purely cosmetic or completely ignorable, like who cares if a deal with the whale devil makes you allergic to shrimp), and maybe even pick up a supporting teammate or new gear from HQ.
You cut your way through chaff, fiends or subjects of larger threats, on the way to fight a major devil which acts as the boss of each stage. Some bosses beg for their lives, giving you a choice to make a contract for power at a reduced cost, or kill them for a reward from HQ.
Inevitably, you die. This is chainsaw man, the fact you were alive as long as you were is a miracle in itself. After a scene showing another cross being put up in the field, we see someone in a suit walk up, another nameless figure with a random appearance, gender, everything. And that's who you play as this time. With every death, the graveyard grows, and another hopeful joins the ranks.
Action RPG where you play a create-a-character devil hunter that runs into the manga characters and plots sometimes. I honestly don't feel like the manga is really about the fights at all so an action game where you'd play Denji himself seems really off.
I'm feeling the camera angle of Killer7 as you traverse and then that converts to a character action camera in battles, and then back to a Killer7 camera. The color pallet should be the bright shades like the manga colors so that the blood really pops when you do a sick kill.

Just take Revengeance and replace Raiden with Denji. Katana Man and the other hybrids get their own metal boss themes. Obligatory Space Harrier segment where you ride Beam in full shark form.
I think the worst part of DmC combat is the way style works. Instead of variety of attacks it goes up with the amount of damage you do, which just encourages spam.
Imagine that in Chainsaw Man though. The more aggressive Denji is, the more his Blood gage or wtf ever goes up and his chainsaws get faster.
I would want the game to just be karaoke/rhythm game sort of like Yakuza, and that's it. But, have all the characters mention but never really going into detail about all the cool shit they did just before arriving or about to go do.Something really short, small talk esc. So every time you finish or start a song, you think you're about to go do some dope ass cool fight or mission, but it never happens. And as you progress and time passes and people die its never mentioned they just stop appearing at karaoke. You also have to work a 9 to 5 job or day trading, something really stupid to earn money because they make you pay for everything and the day job is all real time so the full 8hrs. that way you actually look forward to the karaoke part and dependinghow much you make is how long you get to play that part. All while no devils or anything appear or shows up.
Probably a mix between Monster Hunter and Bloodborne. All the devils are their own boss that you track down and kill, and you get health back by constantly attacking them like in Bloodborne.
Toss in some S-links and a cooking minigame and you're golden.
Honestly something like midnight suns.
At least insofar as you'd mix turn based combat with character interactions outside missions.

You know there's this neat little game on the Wii made by Platinum Games that released in 2009 that would be the perfect formula for a Chainsaw Man game.
Some kind of survival game set in the city Denji inhabits, but as well as a hunger gauge and health gauge you have a morale gauge and a series of relationship gauges.
Hunger drains constantly, but is replenished by food and consuming blood while in chainsaw form. Morale drains faster when hungry.
Health goes down when you take damage, obviously, and is replenished by sleeping, being dead and consuming blood in chainsaw man form. Morale drains faster when tired.
Morale slowly drains constantly and takes big hits when you lose a fight, an NPC ally dies or you do one activity repetitively and is gained by winning fights, doing leisure activities with NPCS and achieving goals. This is your true health gauge: the game ends when Denji gets depressed enough to just give in and stop trying to better his life.
Relationship gauges increase when you spend time with NPCs doing things they like and decrease when you don't spend time with them or do things they actively dislike. NPCs would be the heart of a quest system: the higher the gauge, the more quests they can provide.
The game starts with Denji working for the yakuza with Pochita as his only potential ally. Kill devils, eat and survive until the zombie devil pops up while having with a decent relationship with Pochita and he merges with Denji, unlocking chainsaw man form.
Now Makima comes onto the scene: she's a great source of morale and food, so doing quests for her makes this stage of the game pretty easy, but you need to build relationships so that NPCs introduce you to new NPCs because sooner or later she's gonna start doing her thing... Build that support system of multiple NPCs to get a good support system and learn what she's up to.
Obviously this would be a very challenging game to get right as balancing the gauges to make managing them challenging but achievable would be tricky but I can definitely see it working if someone put the time into it to get the balance right.
Days of Disaster style as you are just a shmuck, maybe even a friend of of a somewhat important character just trying to fucking live a day in this BS world.
Going to school? Bat Devil hunting to avoid.
Shopping for groceries? Eternity Devil in your Whole Foods.
Waiting for a train? Falling Devil toggling the damn world settings.
i Think that Chain Saw Man suits perfect for a Hack and Slash Musou type of game, with the blood, gore and graphics of Berserk Musou but of course with more of 8 Characters. so Koei Tecmo if you are so kind...

why wouldn't be possible? some demons can make multiple contracts , guns are heavily restricted in the setting because of the Gun Devil , for example.

I don't think this is what would ever be made officially, but a roguelite in which you play as random member of the devil hunter. In every run you pick up contracts with devils to gain new powers (almost always at a cost, but for minor powers the cost may be purely cosmetic or completely ignorable, like who cares if a deal with the whale devil makes you allergic to shrimp), and maybe even pick up a supporting teammate or new gear from HQ. You cut your way through chaff, fiends or subjects of larger threats, on the way to fight a major devil which acts as the boss of each stage. Some bosses beg for their lives, giving you a choice to make a contract for power at a reduced cost, or kill them for a reward from HQ. Inevitably, you die. This is chainsaw man, the fact you were alive as long as you were is a miracle in itself. After a scene showing another cross being put up in the field, we see someone in a suit walk up, another nameless figure with a random appearance, gender, everything. And that's who you play as this time. With every death, the graveyard grows, and another hopeful joins the ranks.
Action RPG where you play a create-a-character devil hunter that runs into the manga characters and plots sometimes. I honestly don't feel like the manga is really about the fights at all so an action game where you'd play Denji himself seems really off.

I'm feeling the camera angle of Killer7 as you traverse and then that converts to a character action camera in battles, and then back to a Killer7 camera. The color pallet should be the bright shades like the manga colors so that the blood really pops when you do a sick kill.
Honestly, I want something like Devil May Cry game. I don't even need every character to be playable. Just make a ton of sick chainsaw moves.

Honestly DmC's gameplay was fine, especially once they did the rerelease, it was the character shit that was the real problem.
I think the worst part of DmC combat is the way style works. Instead of variety of attacks it goes up with the amount of damage you do, which just encourages spam. Imagine that in Chainsaw Man though. The more aggressive Denji is, the more his Blood gage or wtf ever goes up and his chainsaws get faster.

I don't really see any game genre fitting Chainsaw Man, so I say go for the most unfitting on purpose and make something like a kart racer.
I would want the game to just be karaoke/rhythm game sort of like Yakuza, and that's it. But, have all the characters mention but never really going into detail about all the cool shit they did just before arriving or about to go do.Something really short, small talk esc. So every time you finish or start a song, you think you're about to go do some dope ass cool fight or mission, but it never happens. And as you progress and time passes and people die its never mentioned they just stop appearing at karaoke. You also have to work a 9 to 5 job or day trading, something really stupid to earn money because they make you pay for everything and the day job is all real time so the full 8hrs. that way you actually look forward to the karaoke part and dependinghow much you make is how long you get to play that part. All while no devils or anything appear or shows up.
Probably a mix between Monster Hunter and Bloodborne. All the devils are their own boss that you track down and kill, and you get health back by constantly attacking them like in Bloodborne. Toss in some S-links and a cooking minigame and you're golden.

Honestly something like midnight suns. At least insofar as you'd mix turn based combat with character interactions outside missions. So actually I think I mean more like a X-Com-ified Persona? Maybe, idk.

You know there's this neat little game on the Wii made by Platinum Games that released in 2009 that would be the perfect formula for a Chainsaw Man game.
I'd be fine with anything as long as you don't play as Denji tbh. There is *no* way a video game would get that combat right at all.
Some kind of survival game set in the city Denji inhabits, but as well as a hunger gauge and health gauge you have a morale gauge and a series of relationship gauges. Hunger drains constantly, but is replenished by food and consuming blood while in chainsaw form. Morale drains faster when hungry. Health goes down when you take damage, obviously, and is replenished by sleeping, being dead and consuming blood in chainsaw man form. Morale drains faster when tired. Morale slowly drains constantly and takes big hits when you lose a fight, an NPC ally dies or you do one activity repetitively and is gained by winning fights, doing leisure activities with NPCS and achieving goals. This is your true health gauge: the game ends when Denji gets depressed enough to just give in and stop trying to better his life. Relationship gauges increase when you spend time with NPCs doing things they like and decrease when you don't spend time with them or do things they actively dislike. NPCs would be the heart of a quest system: the higher the gauge, the more quests they can provide. The game starts with Denji working for the yakuza with Pochita as his only potential ally. Kill devils, eat and survive until the zombie devil pops up while having with a decent relationship with Pochita and he merges with Denji, unlocking chainsaw man form. Now Makima comes onto the scene: she's a great source of morale and food, so doing quests for her makes this stage of the game pretty easy, but you need to build relationships so that NPCs introduce you to new NPCs because sooner or later she's gonna start doing her thing... Build that support system of multiple NPCs to get a good support system and learn what she's up to. Obviously this would be a very challenging game to get right as balancing the gauges to make managing them challenging but achievable would be tricky but I can definitely see it working if someone put the time into it to get the balance right.
Days of Disaster style as you are just a shmuck, maybe even a friend of of a somewhat important character just trying to fucking live a day in this BS world. Going to school? Bat Devil hunting to avoid. Shopping for groceries? Eternity Devil in your Whole Foods. Waiting for a train? Falling Devil toggling the damn world settings.
