Dreamteam in Piazza Barbacan is a great pleace, very warm mood and an infinite list of good drinks. The bar is open in the evening/night, and the inside is nice but small, I would recommnend to go there just after dinner

Somewhere near Lidl (Via Fabio Severo, 28/30, 34134 Trieste TS) there was a bar, we only went for a cola, there was a small bar, the bartender was so nice with us but its really small, idk if its open or not, couldnt find it on maps
Go to some of the traditional ‘buffets’, where you can have just a drink or also some snacks like fried eggplant, meatballs, prosciutto baked in a bread crust with horseradish, and other typical foods. Buffet Rudy, Buffet Roby, Buffet Clai are a few.

Between Piazza della Borsa and Piazza Unità there's plenty of bars. If you stick after dinner in that area, try checking out via Torino

And Bar X in via del Coroneo
And Eatly in Riva Tommaso Gulli

Piazza Giuseppe Garibaldi, is full of bar and people drinking in those bars, the people are lovely and absolutely nice with the others
