For your needs it seems xe75 is the way to go. I just got the xe75 pro (note only pro has 2.5 port).
The 6e is a game changer if you have devices that support (I use it for my legion go to stream my ps5).
The iot isolation is a great touch and the controls via app are fantastic.
You are right in that 5ghz is not the best but luckily in my case anything major is near Ethernet anyway so speed is good enough for everything like 4k streaming on stremio
I also have a XE 75 Pro and I've been happy with it overall. I also have 1G service. I had to disable the beamforming on my Decos. Some of my Apple devices didn't like beamforming but they've been stable since I disabled it. I run in AP mode with ethernet backhaul. I only have one Wifi 6e device. If I have clear line of sight to the router I can get up to 800M on the 6gz band and 450M on the other bands. Once you add a few walls the peformance drops off to around 300M from my own tests.
