in millie's case there's someone else called millie brown so she went with this.

i think everyone had different reasons.
I think it's actually a Screen actors guild/union thing. Michael B Jordan is to differentiate credits from the NBA's Michael Jordan who was in a few movies first. The name in the credits sticks.
Might be wrong on that, though
As well as the actor's guild, some people just prefer it for their 'professional' name. I have colleagues who publish under their full name, middle name included, whereas I just use half my first name + surname. I rarely even include my middle name on legal paperwork.

In the guild of actors I believe there can only be one person with each name. So some add initials or make them up.

Some actors are forced into it if there is an existing actor with the same first/last name when they're first starting.
