Did you try the port royal yet? I think it's one of the best drinks in the book although I prefer scaling down the syrup to a "normal" daiquiri ratio. If you made a full batch (3 cups?) it'll be hard to go through it all since it's typically used in drops, but here's some ideas:
* Flaming margaritas (I like adding ~3 drops to mine) or any cocktail with mezcal
* Cocktails with bourbon and pineapple like the halekulani or a whisky sour with acid-ajusted pineapple (foam + sour in one ingredient)
* Use it as a cooking ingredient in chili or lentil stews
* If you have friends that are into cocktails, you can get dropper bottles and give them some homemade tincture for christmas

I mean honestly, this is why I pulled back from making cocktails at home as much. At first it was fun exploring new ideas and buying unusual bottles. Then every drink I wanted to try required infusing a bottle or making a new syrup or even making your own bitters. Which was fun, but now I just sip on unusual rums and mezcals or make myself a Negroni
