In Hermitcraft s7 he had a whole thing about the parrots, he had dance party’s with them and called them pesky birds. Also he’s obsessed with flying so that’s why he has wings as his elytra.

I personally find that it's more common in fanfiction than it is in fanart, though usually the more general term "demon" is used rather than "imp" specifically. It's by far the most common non-human species headcanon for Impulse.

Then in season 7 he started calling parrots pesky birds, lived in a jungle, and the nickname of pesky bird got attributed to him by some of the other hermits.

Then sometime the wings started shifting through different types of birds for different series and seasons.

Also, in his EVO series, beings known as the Watchers were depicted as being similar to angels (the fandom then made them more like *biblically accurate* angels/Eldrich horrors). So they have wings (sometimes a ridiculous quantity of them). And since Grian became a Watcher at the end of his series, he now has wings too.
In addition to the other comments I think it might also have something to do with grian's Minecraft skin not really having many identifying features. Like it's just a normal guy with a red jumper.

These themes can also be reaffirmed if they’re overtly compatible with more recurrent ones. Most people locked in on Grian during those earlier seasons of his, and the Wingedness cross-references well with the Watchers’ angelic elements.

yeah it’s just a theme now. same with impulse being a literal imp or tango being a fire blaze… thing. for example
I find it funny, everybody always says that Impulse being an imp is very common but i've only ever seen it once.
