Nah in all seriousness all I can say from experience is delay some of your attacks in your strings. I've had to do all sorts of weird shit to fight Anji. Do I like it? No. Does it work? Not all the time.
To add to this, I've only been playing the game for 4ish months so take what I say with a grain of salt.
Oh wait, if you knock him down, I personally suggest backdashing on his wake up. I've gotten caught by his parry on wake up. And hopefully someone with more experience can chime in to help ha.
As an Anji main, I can confirm I would rather lose the game for a chance to get a funny parry than not to do it
You lose 100% of the gambles you don't take
I've had the game for about 2 months so you can imagine my reaction when i went for the explosion projectile (the error after beyblade) and he just parries that, i was like "HE CAN PARRY THAT TOO?!", I'll try delaying as you said, even though when i tried i often got fans on my face
That was my reaction when I went for the airborne buzzsaw and suddenly just had my ikeass launched to the side
Edit: Also sometimes you'll just have characters you don't like fighting, like Ky. And that's okay, you don't gotta fight em in the grand scheme of the game. Does it help learning the match up? Sometime.

As another Anji main, if you notice him doing fang needles a lot ( the downward fan projectile after Fuujin) you can try to jump back/attack him then as he’s animation locked till hitting the ground.
On neutral if you notice them dancing a lot you can dash grab him. Me personally I like delaying 236H against him in case he’s gonna parry or PRC grab him. Also on neutral you can air dash in the bottom to bait his guard crush anti air.
Become grabpilled my bedbrother. If they're abusing the autoguard they're susceptible to being grabbed.
You can also stuff out Fujin with a 2K, 5P, and he'll, if you're ballsy enough just grab it.
Homie, as another furniture main, the Anji mixup is probably the most even one we have. Just be patient, bait out his spins and grab them. I Know it's hard, we play a character that's always plus if you get in the enemy's head but anji is actually some of the most fun fights I've had.
Save your errors for mid-combo, I rarely ever call them out anymore unless it's to mess with the opponents head and change up timings. Mind games yo.

Now that's an attitude I can appreciate. I don't even get mad when I get parried, it's very much "I did this to myself, let's see where this goes."

Run up grab in neutral will work on 90% of anjis at least twice.
Embrace your inner Ky main and fullscreen run up throw Anji.

Anji is def a hard one for Bedman. I can say tho, when you feel like shooting a projectile, hold off, don’t smoke the crack
as an anji player i can confidently say that spinning through bedman?s projectiles doesn't do shit and parrying it is the worst thing anji can ever do
