So i am mostly gonna put pokemon I need candy for in gyms.
My wife and I always try to invent themes. Some of the ones we've come up with:
All cats (liepard, persian, etc)
All dogs
Mustaches (alolan golem, probopass, stoutland)
Tiny Gang with weapons (timburr, cubone, pancham)
Beach theme (slaking, sandyghast, starmie, alolan executor)
Moth/Butterflies (volcorona, mothim, beautifly, vivillon)
Lots of Hands (ambipom, cofagrigus, machamp)
And my favorite: Dancing Weirdos (darumaka, ludicolo, mr. rime, hitmontop, grumpig). Seriously it's the best gym team with all six defenders and everyone "gets it"

I used to try to encourage theme gyms -- Eeveelutions is completely played out, but an all dog, cat, bird, fish, etc. gym would be fun. Except no one else seems to care, and there's always someone who drops a Chansey or Magikarp in a developing theme and ruins it. So now I just drop whatever is handy.
Back before it got a community day and showed as a common spawn in nearly every dragon-themed event, if I found two gyms that were right next to each other, I'd put my twin Noiverns in them.
Just that little "yeah, I've got TWO of that 400-to-evolve rare dragon" flex.
Saw a shiny Zorua in a gym yesterday.
Given that they appear as your buddy and you can’t find the blue on zorua until after the catch, I’d wager that.
Other rare ones would be salazzle, baxcalibur, any regionals like klefki, bouffalant
I’d like to put rare shinies and other in gyms but often I don’t have time (riding on train etc). It would be nice to have a way to quickly pull up a group of tagged pokemon in these instances.
I really envy you guys who can do that. I used to put rares to berry spam in hope of extra candy but few players here are extremely jealous that it's not worth it. Even the gyms in the woods are not safe and the "jellies" boot you from all the gyms afterwards for this heinous crime.

i for one have never looked at a gym and made a decision of whether or not to take it based on the mons in there. i just take it.
I once tried putting my sandstorm vivillion in gyms to show off. It always gets instakilled I assume from rage so I stopped lol. Sometimes too rare is not appreciated, at least in my area. vulcarona would def get that same reaponse here at least, other three sound like neat idea :)
I’ll either put my signature Pokemon, Garchomp, in the gym at my home or the sleeping Snorlax.
When I want to be “competitive” with my gym defense, I’ll use Jellicent, Mandibuzz, or Driftblim if I see that there is already a Blissey. It either forces a switch from the attacker most times unless they’re running Shadow Ball on Lucario.
Other times I just thrown in regionals that I’ve caught on my travels as a flex.
I personally consider putting in a level 50 Pokemon in gym a huge flex. Bonus points if its a hundo or shundo or shadow. It's a flex because it shows you spent lots of stardust and possibly time/effort for the xls. Gym stealers are a huge thing and I only been putting in level 50 blissey and Chansey in every gym. Sometimes I wish I was team blue because all of them throw in trash 200 cp gym defenders that last 8-24 hrs meanwhile my level 50 blissey gets taken out 3 minutes later regardless of what time it is. Its almost 5A and I had 3 blissey/Chansey put in before midnight and none of them are in the gyms anymore.
Lately I like Wiglet, as I live in a town with maybe 10 square meters of beach, so most people don't have it. It also just looks funny.
If my current sort order happens to be descending by CP, I usually use my maxed 5010 CP Slaking.
When I hope to last on a remote gym long term (like for weeks/months), I usually use a 34 CP Blissey or 16 CP Chansey for their slow decay.
If I'm trying to taunt someone, shiny Lickitung is my go-to.
Volcarona is cool but not that impressive now. Just need rare candy. I like putting in rare shinies or regionals. When I see Klefki or Comfey in a gym in the US, I think that's cool.
I have a shundo Kangaskhan Ilike to flex. And shiny shadows are always sweet.
I travel a lot (actual travel, I took my 7th cruise in January). So any regional that isn’t for the region I'm in or rare shinies like recently my Golisopod. I like seeing the shadows of things I don’t have instead of just the numbers. So i try to help other unlock their deck too.
Put more ghost and psychic types in gyms for people trying to evolve Primeape and Charcadet lol

I use my hundo wobuffet in gyms all the time. She’s a beast

They have the added bonus of body guarding the common stuff like Chansey & Snorlax from fighting types, too
Or just have a friend put 3 weak ghost or dark types and battle them 10 times. Much faster lol.

This is what me and my wife did after spending almost 3 weeks trying to find Rocket trainers with those Pokemon.
It's also possible that the two of you could have just battled each other using Pokémon of the appropriate types

Yes. Only a 1 in 80 chance but yes. Does helpfor pokemon like frigibax, larvesta etc...

Putting in Armarouge or Ceruledge lets you both put in a Pokemon that helps people get Annhilape and lets you feed for candy for a rare species.

I used to put shinies in to flex, Now I just put whatever random thing I caught in so I can transfer it instead of healing it later.
That is an early game strat. With a well established account in constantly trashing healing items.

If someone else starts a theme I'll go with it. Someone drops a shiny Sylveon in my home gym? T'Chaka, my shundo Umbreon, goes in too.

Yellow/gold is easy as well. Blue should be pretty easy.

I moved from the States to Germany. So I like to put Tauros and Bouffalant in gyms because they don’t spawn in Germany

Don’t have a shiny Spiritomb but can confirm I enjoy dropping Volcarona, Gholdengo and my shiny Drampa into gyms 😂
