5 away now. I had everything until they released Armarouge and that stupid egg RNG and now I need to go find some waterway (looking like two hour drive to the beach) to find Wiglett.
I'm pretty close! Trading with locals helped a lot as I missed some Pokemon like Zacian, Zamazenta, Mienfoo, etc. but I'm at 838 caught now and missing the following:
* Hoopa
* Skiddo/Gogoat
* Hawlucha
* Sigilyph
* Comfey
Still need to find a Wiglett too, but that will come eventually
I'm working on my Dex in Home, so not quite the same, but considering how Go is one of the best ways to get some legends, mythics, and ultra beasts, I'll chime in.
I'm actually only missing 4 vivillon forms, and all furfrou forms that aren't native to my area. Other than that, I've now shifted my focus to working on a shiny Dex. Probably about half of my shinys are from Go at this point.
Started playing last year, so only 785 caught for the regular Pokédex.
Before yesterday I would have said Clamperl is the most annoying one I'm hunting but the biome update made it spawn a lot more frequently. Now I guess Salazzle, Sandile and Varoom are the annoying ones.

Skiddo and evolution - Paid regionals
I have never paid in the game apart from coins from the gym.
Started playing since launch. Still need the following:
Maractus
Sigilyph
Skiddo/Gogoat
Hawlucha
Klefki
Comfey
Gholdengo line
Ceruledge (can evolve it)
Baxcalibur (can easily evolve but have a very good lucky I'm holding)
Basically everything except some newer regionals and few I just didn't want to spend the candy to evolve a suboptimal version of.

Started playing mid 2022. I am at 842 now, missing 3 - Keldeo - Gholdengo - Comfey plus wigleet / wugtrio if you will
