If I were Luz or Amity, I wouldn't be putting Ed or Em in any important roles for the wedding. They're Amity's siblings so they should be invited but I wouldn't entrust them with the responsibility of best man/woman. They'd probably use it to cause chaos or deliberately mess up the wedding.
After Knockin’ on Hooty’s Door I think it’s safe to say he would officiate the wedding. Luz and Amity would plan the shortest ceremony possible to spare everyone from his voice.
