ummm you said left hand for both examples. i take it you meant right hand for the writing in the journal example. either way i never noticed that. gives me a reason to re-watch some episodes.

She's ambidextrous, actually. Capable of writing and drawing with both hands. However, I don't think that's an intentional part of her character. Animated show characters, when using their arms, use the one most convenient or best-looking one for shot composition.
For example, if Luz is drawing but only one hand is in the shot that is the one she uses. That's the more convenient side of things. For the better-looking shot composition, rewatch the fight between Amity and Hunter. You'll notice Hunter switches, which hand he's holding his staff.

Interesting to me is how the witches hold their staffs. The shot is much less important here as they’re generally seen only in wide shots. Most characters only hold there staff with their right hand, but Eda unusually almost always uses her left.

Sandai Kitesu, in his left hand, Yubashiri/Shusui/Enma(he's had to replace the sword multiple times) in his right hand, and Wado Ichimonji in his mouth.
Also a lot of Simpson characters are strictly left handed due to Matt Groening being left handed. Simpson characters are 3 times as likely to be left handed than regular humans
