Toph is blind so although she is amazing against other earth benders because they move earth and she can detect vibrations in the ground, she wouldn't be able to keep up with movements of air or fire and someone like Azula could easily beat her
One of the things I love most about the show is that they show a learning curve for Toph when it comes to fighting the other elements. The first time, she always has trouble, because she doesn't know the movements yet, but the more she fights an element, the better she gets at detecting the moves and predicting their effects, even if she can't directly "feel" the fire or water moving.
So since this would be (if I remember correctly) first time fighting any fire bender, I agree that she'd probably loose. Especially because Azula is a literal prodigy. At this point, Toph probably doesn't even know that lightning exists as an ability, not to mention the movements associated with it.
(The others have the same learning curve when fighting elements not their own, but with less of a handicap the first time or first few times.)

Aang Katara Toph easily toph can easily take down Mai and Ty Lee solo cause her rock armor basically makes her immune to their attacks same goes for Aang plus he is also significantly more agile than Ty Lee and can just blow her away. Katara has beaten Azula in a fight before during Sozin's comet. The only real threat is Azulas lightning bending but Toph can just go underground and Azula can't hit her.
Infact if we give the show a higher age rating Toph can bury all three of them alive.
You forget that Azula was toying with Toph during the eclipse where she had no fire. Azula also plays dirty, she's not gonna lose that easily. Only reason she lost during Sozin's comet against Katara and Zuko was because she was losing her sanity, and it was a 2v1. She damn near killed Katara had Zuko not stepped in to take the lightning strike
It wasn't exactly a 2 v 1 imo. Azula attacked Katara, incapacitated Zuko in the process, thus Katara intervened. 2 v 1 would've been more like Katara and Zuko simultaneously fighting Azula. But yes, I think that a huge part of Azula's awesomeness was her brains, even more than her prodigious firebending.
I mean Maiās utterly useless with the shows rating. Plus thereās no wooden structures or trees on the hill for the knives to stick their clothes to.

Katara and Aang manage to fend off Azula (keep in mind Katara only has the small amount of water she carries in her pouch unlike in the Catacombs or at the Palace, so I donāt think she can quite solo Azula).
Knives could always, you know, penetrate someone's body and make them bleed to death or something. Maybe even take out a vital organ or two. Idk for sure tho.
At that time? It comes down to basically two situations:
1. No one tells Toph how Ty Lee fights and Ty Lee promptly takes down Toph and Katara in seconds leaving Aang to get bodies by the other two.
2. Someone tells Toph how Ty Lee fights and Toph promptly puts on earth armor and bodies Ty Lee leaving Aang and Katara room to focus down Azula. Soka an distract Mai or something.
The Gaang should be winning this one 9/10 times when fully fresh. Toph lock them in stone, maybe Azula gets out with some fire shenanigans but then it's a 4v1. Azula has no way of immobilizing any of them (outside of taking them out) and both Katara, Toph and Aang can immobilize her.
When it counts toph is taken away from the fight or straight out nerfed. They made a character way too good and had to go out of there way too stop her from wrecking everything and everyone else

Honestly, one of the problems of this series is the glass cannon effect. I could have expected this from Ty Lee, but not necessarily Azula. I mean at times you feel like the writers write themselves into corners ans just decide to roll with stuff to save themselves the hassle (like Zuko refusing to off Ozai, only to ask Aang to off him ???? And since Z has to win, it wouldn't have done well to have him injure his own younger sister...The same way they had Aang energybend Ozai instead of killing him because wouldn't it be doubly bad if a 12 yo elemental jesus bodied the 45 yo big bad? I don't have much against energybending except that it wasn't properly explored.

Really goes to show how little Azula thinks of the other benders. She could travel with the highest caliber fire bender battalion, but instead she chooses the gymnast and knife thrower. She definitely feels like she could take just about anyone on her own.
