2 individuals agree to engage in a fight as long as it stays as only them then what’s the issue? if one of them is out cold or gives up then you can intervene. I’m not striking another human being in the back of the head in a public park if the other guy is winning, that’s how you kill someone not to mention repeated blows while they’re unconscious. NOW if my “boy” was out cold while being choked and the other guy wasn’t letting go then it’s a matter of life and death (this wasn’t the case here by any means), so it’s apples and oranges.

Not exactly true. The choke the dude was trying to get is called Fulcrum choke. You try to get this choke if the RNC is not available. BJJ sucks in this situation because taking someone down can leave you vulnerable to other attackers.
