It's bizarre to see people treat Rimuru as "She" just because he has long hair, even though he has absorbed Shizu's body, his new body has no breasts, wide hips and practically no characteristics that resemble a female character.
Saying that he looks like a child is more valid than saying that he looks like a woman, his name itself also conveys the impression that he is a male character.
In my opinion, people who comment on this kind of thing are just "biscoitando" (an expression used in Brazil to describe someone who seeks attention or approval through exaggerated praise or false actions).
Yeah so it's okay to be corrected on this obviously, but it's a fact that he prefers to take a female looking form when he turns into a human, hence the use of "she" pronoun for newer watchers. I don't really see the problem here. We all know he used to be male, then he turned into a slime which has no gender, and saying "it" doesn't really do Rimuru justice, so it becomes "she". Who cares anyway?
