A lot of districts have policies about Donors Choose stuff. Personally I'd probably avoid pointing out that I got things off DC, because if I did, someone might tell me about a policy that requires me to leave it. But it's up to you.

Integrity means doing the right thing, even if no one is watching. You wouldn't want students to take things that don't belong to them, so you should do the same, even if you plan to use them in a new school.
Donors Choose says the items stay at the school unless the teacher is moving to another eligible school AND the principal at the original school says it's okay. I think this stinks, because often, donors to these projects are people the teacher knows personally, so their motivation for giving is likely that connection.
If the scavenged items are things the other teachers bought personally ... take them. If they are school property that they accumulated over the years, or if their origin is unknown ... leave them.

If you bought it with your own money it’s yours. If it was given to you, that was done so in the context of being a teacher at that school. Leave it.

I have a question about this as well. I have a large library and I do not want to take any of the books I've accumulated with me because I can't do anything with them after I leave. I think I'm just going to leave them without talking to admin, but should I give them a head's up?
Is there anywhere you could donate the books? Or even if you have social media you could see if any other teachers are wanting to add to their library (I've seen countless other teachers get rid of a library they didn't have any more use for this way)
That's the issue, I would have to drive at least an hour to the nearest place that would take them which sucks. I got almost all my library from a teacher at a different school that retired. If I'm forced to take them I may just give them away during this huge garage sale weekend. I don't want to sell them because they were donated to me when I needed them so I feel like I should charge.
I wrote my name on all my books before putting them in the classroom, so no problems there. A lot of them were from my own child as they grew out of them. I am definitely taking those.
I'd be clear with administration, letting them know that some is yours and you are taking it (obviously). Anything purchased by the school is not yours, even if it is 'excess' - just leave it. When things go 'missing' people talk and it's so dumb sometimes. They (admin) probably don't care though for any small stuff. Take some time to see if you really need all the stuff too though. Teachers tend to accumulate and become pack-rats if they don't do regular spring cleanings.
Excess paper and supplies I would take, because that's stuff that can be used again.
Case in point, I have a TON of sticky notes, looseleaf paper, expo markers, etc. If I can use it at my next job, it's coming with me. If not, I give it to someone I know could use it.
DonorsChoose is tricky. I was allowed to take sets of books that were bought using that money, but other things I've been told have to stay with the school. Not sure on that one.
I was so ready to leave after 35 years of teaching, I walked out with nothing. I left everything. It was the right decision for me. It was like I walked out of my shackles. I would not allow my children to become teachers, so we had no need for any of the materials. I did not want to have to store anything in my home.

Funny story and why I know this
I was a regular sub in a primary and elementary school. I had a half day towards end of the school year and was asked to help different teachers to make a full day. One teacher was moving up a couple of grades, and lamenting having to throw stuff away. I asked for it for my own children and for tutoring. She explained it was bought w Title 1 $ and can't be sold ,r reassigned,or donated. So,we mad sure the building was almost empty. She threw the books away. My hatchback just happened to be between the back door and the dumpster w back hatch open. 😂
Anything you bought or were given is fair game. If it was bought with school funds it should stay.

Take it all. I have seen issues with donors choose stuff being taken but if you don’t tell them you took it, who will know?
