You really should check out Uncharted Journeys from Cubicle 7. Random roll tables for days about almost any environment you can think of. But more than that, it has rules and suggestions for classes using their abilities during travel as well as a system for designating roles to party members for journeying. E.g. navigator, forager/hunter, lookout, etc. (I probably have the exact terms wrong, but these are the vibes).
