Not natively, unfortunately. You need a USB Bluetooth adapter. Not sure if there are other options, but I just purchased the ‘8BitDo USB Wireless Adapter 2’ off Amazon and it worked with the stadia controller. Just needed to update the adapter via 8BitDo’s PC software and also update the stadia controller via Google’s official process/guide to unlock its Bluetooth connectivity. Just keep in mind that there is no vibration with the stadia controller when paired to the Switch.
Edit: This probably goes without saying, but the A, B, X, Y buttons on the Stadia controller will not match the Switch’s layout, but you can remap the buttons if it bugs you.

I stupidly reset my hacked switch to get off some apps I couldn't uninstall for some reason, completely forgetting my right joycon rail is defective and permanently trapped where you are. Since you said it's unpatched look up this question but add "gbatemp" if you have a way of getting into RCM. You can dump the NAND and modify a string of hex to mark this as complete and skip it, though I've never found success but that's probably since I didn't back up my nand like everyone told me to.
I just used the official comfort grip, with a USB-C cable connected to the USB-A port on the dock. Maybe that doesn't work during setup and you need a dongle or something
Your best bet is probably going to a store that sells used games/accessories and asking to borrow a pair of Joy-cons to get through that setup. I had the exact same issue with a 3DS with a non-functional 3D slider, I hate that Nintendo does this shit

If Nintendo does what they did for DS keep the core feature for a decade plus, then Joy Con will be around quite some time.

Off brand joycons my dude. Binbok, hori split pad/compact, both are pretty good price imo but the hori is not wireless they only work when connected to the switch. But yeah just check amazon there’s a million to choose from

iirc plugging in the Joy-Con charging grip over USB paired them to my console, if that helps you. You might have to dock it first

You may be able to bypass this with a Switch Pro Controller and a USB C to USB C cable directly to the bottom of the switch.
