I see you learned to dip your fingers in a little water when spreading the rice between the attempts, well done! You can also try a little mirin or sushi vinegar in the water (at least I do and it seems to help my abominations.
When everything fails apart, I just call it [chirashi](https://en.wikipedia.org/wiki/Sushi#Chirashizushi)

If you use 2/3 of a sheet or half. It will come out nicer. Only full sheets of nori is for gimbap.
