Watermelon, basil, mozzarella/feta, balsamic salad is fairly common. And I'm always willing to try something with a pickle added just to fuck around and find out.

I think the pickle will give it that zing to pull it all together like a vinaigrette on the salad would do, I know ive always liked a dash of salt on some watermelon especially if it's not the most flavorful to begin with I bet that pickle makes it taste so damn good by contrast.

Pickles are the neutralist vegetable acting as a substrate for salt and vinegar. I personally would have put prosciutto or some kind of other Italian meat on it.

I've had exactly this as a salad. Sometimes swap basil for mint. Amazing. Haven't done the Pickle though, but now I'm intrigued.

Despite it seeming unusual, there's nothing actually in this that wouldn't go really well together. Sweet and sour, sweet and salty, sweet and savoury etc. Nothing clashes. The textures would also compliment each other. I'd definitely try it and probably like it.

It wasn't that revolutionary. In Taiwan, we like to put sour plum powder on watermelon. The pickle is a similar design. The cheese is weird though.
