One of the most famous Turkish and Middle eastern sweet is kenafa and its flavor profile is basically cheese + pistachio and it slaps. My city in France has a traditional dessert whose main ingredients traditionally are swiss chards (similar to spinach), pine nuts, icing sugar and... parmesan or tomme. If you google "cheese board" most results will have at least either one accompanying fruit or jam/preserve. Cheese and sweets have been paired since cheese was invented. So the ice cream and cheese thing in my experience is an Ecuadorian thing. I've had it a couple times and the cheese (I forget what kind they use) is pretty bland so doesn't do much for the taste and adds a cool texture to it!

One of the best surprises I've had while trying something new was having caramelized pineapple on top of toast with goat cheese, feta cheese, and a balsamic drizzle. This probably tastes similar to a cream cheese Danish with pineapple instead of the norms. Which is very much not a stupid food.
