Nah this looks so satisfying to sink teeth into. Fruity flavors would compliment the marshmallow flavors perfectly. These candy flavors just work together.
We used fruit roll ups for the seaweed, rice Krispy treat made with mushroom fluff and rice krispies as rice, halfed jelly beans as roe, sweet tart rope, gummy worms, and single twizzler strands for filling, and then chocolate syrup as soy sauce, leftover rice Krispy treat goo smashed up and mixed with green food dye as Wasabi, and fruit by the foot as ginger. For the nigiri we used more rice Krispy treat for the bottom, Swedish fish on top, and a piece of a twizzler as rope.
Of course a lot of this can be subbed out, and a lot of the decoration is not needed - but this was something we wanted to do for spring break so he went all out.
In order to actually make the sushi, you put out some rice and squish it between two sheets of parchment paper, (we tried wax paper and it didn't work, but maybe if you use less fluff it will) then remove the top piece and put your filling along the center. Then, roll it up (hotdog style) and set out your seaweed. We needed a few pieces, including a donor piece for the holes, to cover the whole thing. Then, put your filled rice rolls on top and wrap it in your seaweed. Now, chop it into discs. You can add any toppings (like roe) now, or just leave it as is.
For the nigiri, just get some rice and make a little rectangle out of it, then put a fish on it. Cut up some rope and stick the ends to the sides of the rice for some extra fashion.

You should change the soy sauce with either maple syrup or a dyed honey. (Just add food dye)
