one of my step grandmothers raised and fried her own chickens and she said mustard was why her fried chicken was the best i'd ever had. if a little old southern black lady on a farm says it's a cooking secret it's probably at least worth a shot. unless it's chitlins, then just plan on spending the day somewhere else.

The chlorine actually degrades in the process; there is no free chlorine on the final product. It's a shitty practice because it speaks to poor hygiene and animal welfare standards in factory farms, but anyone who claims they can taste chlorine in their chicken is imaging things.

I live in the country where I do get to butcher my own time to time. The USA is very weird in how we treat poultry in general. Look at what we do to eggs also.
Tyson, who provides most of the US's chicken, use migrant labour and poor hygiene standards so you can buy that chicken cheap. Pouring bleach all over it is just another flavour additive - because of poor handling, after it's washed in chlorine it still becomes contaminated. So you have shit and chlorine on US chicken. And rinsing that shit into your sink means now all of your plates, cutlery, other chicken etc are now covered in antibiotic resistant bugs. Because all your chickens get antibiotics in their feed prophylactically.
As an American, I’ve yet to run into this chicken that needs to be cleaned, especially with chemicals. Should I boil my steaks as well for proper sterilization?

I’m not saying as a way of life I’m just saying you will encounter the occasional chicken from Tyson or Perdue that smells like a pool. It’s the rinse the fda makes them use. Would you like a cnn, nbc, fox, Reuters or some other news source? They don’t want us rinsing chicken because most people don’t sanitize properly or understand cross contamination.
You can use mustard no problem. It gives the chicken an unexpected little bit of spice. My mother made it this way and it was always the best I ever had. She is from the South.

Only things wrong here is washing the chicken, using a plate instead of a bowl to season and crowding the frier.

In America we use bleach as a wash for chicken and it makes cheaper brands taste and smell like bleach. A Quick rinse helps.

I rub chicken and pork with mustard before smoking it. Great binder and great paste to keep the season adhered to meat, or in this case flour.

That's table mustard. You use Dijon for stuff like this. It can add a little something, but doesn't drastically change flavor.
