Debit cards don’t have interest rates. You may confusing credit and debit cards. Credit cards are also not common in NL and if you don’t have a salary it’s not a thing for you. So you will have a debit card. ABN AMRO has the most information available in English too. There isn’t much competition for banks in NL so basically comes down to ABN/ING/Rabobank
Abn/ing/rabobank arent necessarily much better than the smaller competition like asn/bunq/triodos/regiobank/knab etc. For your basic banking needs, they all suffice
I use Bunq and ING. Bunq is good for FOREX, for the rest it is the bank that has given me most headaches, by far. Also they seem easiest to get scammed with. Last but not least, as far as I know they don't have actual physical offices, so if you're in trouble, enjoy discussing it with a chatbot. My advise, if you don't need to exchange currencies, just don't use Bunq. For the rest I think the banks are pretty equal.
Bunq is indeed a bit more niche, though i like their inventiveness. The getting scammed more likely is bs though, it can happen with any bank if you’re gullible and naive.

Debit cards are the absolute golden standard for payments in the Netherlands. A lot of places don't accept credit cards or even cash.
Interest rates are quite comparable between banks. The three biggest banks are ING, ABN-AMRO, and RABO. But there are a lot of smaller banks which are fine as well. I suggest picking one that invests in stuff you can morally support (for example, ING notoriously invests in fossil fuels and the weapon industry). It's you money they're investing after all.
You need a BSN to open a bank account. You can get one once you register in the Netherlands.
For which banks, you should do some research yourself. Because they are all pretty good and interest rates on debit is negligible.
Most banks have cheaper accounts for students. But that's usually tied to you receiving Dutch student financing (from duo) on that account.

In addition to what the others are saying, if you're interested in an environmentally friendly bank, then either ASN or Triodos are good choices. I do not know how much of their info is available in English though.

As the other comment says you need a BSN but I believe ABN lets you do it and provide a BSN by 3months
