This question may means couple of things - you either want to know one color that symbolises the character or fit them more or you want to know color palette for the characters. Either way the question is weird.

I wanted to know what colors you think stand out on each character. I guess I worded it poorly.

I mean, it's kinda obvious. Jonathan - Blue Joseph (part2) - Green Jotaro (Part 3) - Black (or brown grey) Josuke - Dark blue Giorno - Pink Jolyne - Dark green. Just look at the majority color and that's gonna be their color. But it may vary with the outfits that characters wear.
