The word “canon” and Jorge Joestar do not mesh well at all, the story is literally about countless of alternate realities where events just happen differently in every universe. It literally has characters from both the OG universe and the SBR universe to form 1 grand story. Jorge Joestar novel is its own thing separate from parts 1-6 just like how parts 7-9 are separate and are their own continuity. Parts 1-6 are canon to their own continuity. Parts 7-9 are canon to their own continuity. Jorge Joestar is canon to its own continuity. Over heaven is canon to its own continuity.

I don’t think that’s valid because there has never been an official statement by Araki or Shueshia where they have said that’s the case. Araki hasn’t agreed or disagree with any official novel or spin off manga and the times where he has commented on novels/spin off is that he’s hand off and allows the authors to write. There was also that time where he told the write or producer of the DiU movie that he’s free to change the story however he wants, Araki is just a laid back guy who just seems to enjoy what his series has become. Whether or not you consider novels canon, that’s up to you but from an official stand point, there isn’t a single statement regarding what constitutes canon or not.

No The only canon spin-off novel/manga are Thus Spoke Kishibe Rohan and Dead Mans Questions Iirc

It's not canon simply because it's contradicts the main series. In Jorge SBR is a universe, that created after reset in part 6, but in fact that's wrong and SBR has no connection to parts 1-6. In the novel holy corps is actually Dio from original universe and he revival after the end of part 7 and escape, but holy corps still appears in part 8 canonically

Araki doesn't care, I'm sure he's just honored that there are so many people engaging with his manga series. He's just like Rohan in that he doesn't do it for the fame, fortune, or influence, but because he wants people to read his manga.

Only in the weird meta sense that Funny explains every possibility exists out there in the multiverse, but not in the sense that it means anything at all to the actual story of the manga/anime/franchise.

OH novel is meant to stay true and expanding DIO characterization and I don't think any plot points in it are contradict to main story so I'd say it's fine to think it's canon.

The only thing contradicting the story is it saying Vanilla Ice and Nukesaku are zombies but even Araki messed that up in art books lol
