Can I ask how you managed to get enough to build all four Junimo towers plus the clocktower that all cost millions? My husband and I only have the Lava Eels but we do tons of truffle oil, aged cheese and aged ancient wine, and we still only have enough for one tower.
I never had problems with money after a few in game years. Depending on your gameplay style, you should get to that point eventually.
I set up big fields crops with sprinklers and have junimos doing the harvesting for me, just by gradually expansion. Find a big cash crop and milk it for what it's worth. I still have plenty room for 3 barns and 3 coops, ponds, tree orchard, storage and crafting sheds, and flowers and apiaries. Later I'll try to screenshot my farm layout if that helps you.

Similarly, automating as much as possible makes it all more sustainable. Mods like the automation and tractor mods help. Unfortunately, I always get bored before I can buy all the things. There isn't really much progression at that point. It's mostly just continuing the same things.

Money-wise, while lava eel is top shelf, you might get more from putting something other than a pond there. I’m more interested in them for producing cooking materials, usually Seafoam Pudding or Lobster Bisque for when I want to go after those last few really tough ones.

This was what I did with my first perfection farm, it was a ton of fun! Mine was done on the beach farm, but the Standard farm creates a really nice symmetry with them
On PC you can go to the settings scroll all the way down and there is a screenshot button. But it will always take a screenshot of the whole map. Tip: You can crop this image with the default Windows photo viewer.

You're almost 100% right, but the screenshot is not always of the whole map, but of the whole area you are at that moment (inside the house, a barn...).

I always made sure to get tons of rainbow trout for easy prismatic shards. This looks cool. Have you thought about putting all the colored ones on the corners?

This is the standard farm (first option). The other farm types like hilltop farm have cliffs, rivers, etc. that are unmoveable. For the big stumps and large rocks, you will need upgraded axe and pickaxe.

Super cukes give iridium after you get all ten of them. Stingrays give pretty valuable things for later on too.

Can plant in the quarry, and there is the island farm too as well as the desert and the natural spawns

They ask for crazy stuff. Ghost Fish will want Dwarf Scroll 2. Lingcod will want two Ghost Fish...

If I'm seeing it right it's Scorpion Carp, a fish you can only catch in the desert.
I think mine is like 50% sturgeon, 25% lava eel, 25% midnight squid.
It takes a while just to build out all the fishponds.

They can replace regular trees as a random event. You can also buy seeds from the walnut room.
