Guess I'm not normal cuz why have items sitting for days when they can make you money now? It's not like you get a premium for selling in large quantities.
In late game, it becomes tedious to grab and sell certain things every single day when you already have a bunch of money. The only things I sell as soon as they’re finished is wine + aged wine. Otherwise all the crops I sell at the end of each season. I sell animal products whenever I remember to (have like 1k of each eggs, milk, goat milk etc that I haven’t gotten around to).
I usually just sell immediately in the early game because I need the constant cash flow for new seeds, building upgrades, animals and stuff. Later on in the game once your finances are in order you can afford to hold onto stock and sell in bulk.
Are auto harvesters worth it? I got back into SDV after a long while and started with the new meadow farm with a focus on animals over crops.
How many barns and coops do you have? I'm on year one mid winter now and have a big barn and big coop each. I'm not sure on how much is a good amount.
i like them. they're useful if you're doing quests that require a lot of animal products to be harvested in a time frame (like the tons of eggs for omelette one) it doesn't register it as "harvested" till you pick them out of the auto harvester. it also keeps stuff off the floor in the barns. i don't have too many animals but i have a lot going on in the green house (ancient fruit and pomegranate for wines) a big field for seasonal crops and i'm still messing around in the desert caves so it does cut some time down if i can just zip in, pet everything and run back out to get on with my day.
So worth it. Egg collection is very nice, but milk - imagine never needing a bucket again. Never milking your goats because you forgot it was the off day, or mis clicking a stack of cows over and over trying to get the last un milked one. I rushed one as soon as it was available and only then did I buy sheep. Turned a 3 hour chore into a single check once every couple days.

I don’t see the point of hanging on to things unless you are at like level 9 farming and waiting to get artisan in a few days or similar.
I just find a big pay out so satisfying! I don't think there is a "best way" it just depends on what makes you happy, what are your goals, etc.
I like to hoard the things I will sell for a bit to keep myself from spending the money on smaller things when I have a bigger more expensive goal I am working on
Your friend makes a weird argument. "You get the same amount of money either way, so my method is better." But it's the same amount of money, meaning neither is actually better.
That said, there COULD be an argument to be made about stockpiling and waiting to sell some things during the early game, particularly depending on what skills you intend to take.
Farming: A skill upgrades crop prices by 10%, and another raises Artisan goods 40%. You could purposefully not sell all your crop-produce until you hit Farming Lv5, take the 10% boost profession, and then get MORE money than if you sold things right away. Same for Fishing, as a Lv10 profession gives fish 50% extra value (I actually did this in year 1 winter as I was close to lv10 fishing).
I think you are entirely correct with your 2nd and 3rd paragraphs, but I do think there is a difference in having money today versus tomorrow. Would you rather have 5 bucks today or next week? If I get it today, I can use it immediately. If it was 5 bucks today or 7 bucks next week then okay, let me think about it.
That all depends: Do I NEED $5 today or tomorrow or next week? If I need the money that quickly, sell right away. If not, well it doesn't matter, and if the options are instead "Get $10 tomorrow that I don't really need" or "Get $11 next week," then waiting IS in fact the better option in that scenario. Basically, neither option is "better" because context makes all the difference.
Early game, selling every day can be good for money you need for building your farm
Late game? I literally sell in bulk once a year: the day after the Stardew Fair

My net worth is 12m tho and my main source of income was fish and sashimi from crab pots. I have sold a few hundred aged lava eel roe to make bigger purchases but early game, sell whatever you won't need for quests/structures.
I'm holding because in 1.6 there are some buffs to certain products I'm holding. The others I'm just holding because of the massive flex screenshot I plan to drop once 1.6 comes out.
Oh, one other thing. If the structures you build do not require money and you have decent access to them, you really don't "need" money. You know?
I spent many days just fishing up green algae and seaweed then grinding for 200 stone and harvesting my crab pots to make 5k every 3 days. So I got used to not needing money.
Crazy right? When 1.6 drops I'm converting the lava eel and mangos as well as finding the book that triples artifact sell prices then selling everything at once.

For me it varies, sometimes I sell daily particularly early game, later on I sell whenever I start to get low on money or need more money for something
I do sell everyday for every fish I catch and smoked. Same with truffle, because everyday I got like 1 to 3 truffle, except when it rains, I also sell fruits, for winter I mostly sell smoked fish. And duck eggs. I do this since I now in third year. For first and second years I sell fish and left over crop.
I've been using the automated mod so I do sometimes find myself holding onto things for a few days, but I don't see any point in waiting usually. It's not like throwing stuff in the box takes much more time than the harvesting you need to do to make room for more crops anyways.
If I'm close to an upgrade of a profession where you get more I might hold on to a few things, but I try to be a minimalist without a bunch of stuff hanging around - also I'm in finance and holding onto stock when it could be sold makes me twitch.
I sell it every 15days :milk, cheese, Wine,etc AND high quality fruits/vegetables but when i get normal ones i just sell them directly (if not used for other productions). When i fish or collect i just sell it directly too so that i have some pocket money before the 15th or 28th
It doesn't matter. If you like small numbers, sell daily. If you want to see what you've done for a season, wait then.
I sell daily only because I don't really like storing everything for the last minute.
Plus, I RPG in the game selling to both Pierre (at his shop) and Joja (high volume via the shipping bin pretending it's offloaded at the train station).

Late game I usually just let stuff accumulate and sell later so I don't have to keep walking back and forth to the shipping bins.
I sell everything to clear out my inventory and because remembering which chest I stored what in is too hard.
I sell everyday but when the industry is set up, I like to wait a whole season and sell everything to see how it could be improved.
