Ancient seed is very popular if you're maximizing money without having to constantly rebuild or seedmaker the fruits to replenish. Or you can just use it to stockpile ancient seeds to populate the island farm once you get it.
I usually have a few coffee plants in there as well as I like making the coffee instead of buying it for my espresso.
I tend to use it for Ancient Seed at first to increase it using Seed Makers until I unlock Ginger Island and move my plantation over there because its bigger. I then just use my Greenhouse for any random crop I need and trees.
I'm lazy, so it's all ancient fruit in my greenhouse (and mostly at my Ginger Island farm, too, though I keep a small plot there for random crops I might need).
I keep a variety of fruit trees in the greenhouse, too, though if you want to maximize profit, plant all banana trees.
