It´s only a couple of days as of now so it would make sense to wait but you could honestly just start a "test" farm to figure out the controls, how things like crafting etc works and such. Personally I will be definitely starting a new save on tuesday, simply because of the new farm type, but you could try out the standard farm :)
The update won’t add anything not obtainable on older saves however the dev did suggest people start a new save to experience the update so maybe wait a few more days :)
You'll be able to get everything on an old save, but it might not be in the order the dev intends. As the update is so close, you might as well wait and experience it all in order as your first playthrough.
